What this is, and what it is not

Most diet “plans” are built on restriction and a promise of fast weight loss. This one is not, and I would not put my name on one that was.

This is your second structured week of Nordic and European eating, and I have built it to feel different from the first: warmer and more spiced in places, with a run of calming evening plates for the end of the day. It does the same job the science supports, steady your blood sugar, feed your muscle, and build a pattern that supports a healthy weight and metabolism over time. No calorie counting. No hunger. Real, satisfying food.

Let me be clear about the timeline, because precision is the point of this journal. One week does not transform your metabolism. The Nordic diet trials that inform this plan ran over 18 to 24 weeks, not seven days [1, 2]. What a week does is give you a clear, doable template and show you how steady you feel eating this way. This is a pattern to keep, not a miracle.
