The Calming Evening Supper for a Nervous System That Will Not Switch Off

This week in the Journal I am writing about what chronic stress does to your metabolism, and how the body is built to move out of stress and into recovery. This is the plate that belongs to that conversation. A warm, simple evening supper built around the nutrients that support a calmer nervous system and better sleep.

When to eat this
Evening, a couple of hours before bed. It is deliberately light and warm, the kind of supper that helps the body shift from a day of doing into rest. If you have had a genuinely stressful day, this is the plate for it.
Salmon, Wilted Greens, and White Beans in Broth
Serves 2. 15 minutes.
Ingredients
2 fillets of salmon or trout, about 200-250 g each
1 can (400 g) white beans, drained
200 g leafy greens (spinach or chard)
2 cloves garlic, sliced
1 tablespoon oliveoil
400 ml warm vegetable or chicken broth
2 tablespoons pumpkin seeds, toasted
Salt, pepper, a squeeze of lemon
Method
Warm the oil in a deep pan. Soften the garlic for 30 seconds, then add the white beans and the warm broth. Let it come to a gentle simmer.
Lay the salmon fillets into the broth, cover, and poach gently for 6 to 8 minutes, until the fish flakes easily.
In the last minute, stir the greens through the broth until just wilted. Season, add a squeeze of lemon.
Ladle into bowls, salmon on top, and scatter with the toasted pumpkin seeds.
Make it your own (US-friendly)
Fish: any oily fish, or leftover cooked salmon warmed through in the broth.
Greens: frozen spinach works when fresh is short.
Beans: cannellini or butter beans are ideal.
Scaling
Doubles easily. The broth base keeps well and reheats gently the next day.
The science behind it
The nutrients in this plate map onto the systems the Journal is writing about this week.
Magnesium is involved in the processes that regulate the stress response and sleep, and many people run low. Leafy greens, pumpkin seeds, and beans are among the best food sources. In supplement form, magnesium has a modest, real effect on sleep: a meta-analysis found it reduced the time to fall asleep by around 17 minutes, though the researchers rated the evidence quality as low [1]. That modest signal is exactly why I prefer to start with food, where magnesium comes packaged with fibre and protein.
Glycine, an amino acid with a small but real signal for sleep quality, is found in protein-rich foods and broth. In studies, 3 grams before bed improved subjective sleep quality, likely by nudging down core body temperature, one of the signals that initiates sleep [2].
The warm broth, the protein, and the magnesium-rich greens and seeds together make this a supper that supports the shift into rest. Not a sleeping pill. A plate that works with your physiology instead of against it.
