Chocolate lovers can rejoice because science is on their side. In this article, we'll explore the potential benefits of including a little bit of chocolate in our daily diet.
Maybe you’re a chocolate lover, maybe not - but we all know one for sure. It could also be that you are a “salt-lover” more than a “sweet-lover”. According to sensory and preference science, you either prefer salt or sweet, and that this preference says a lot about your risk of many diseases and conditions. Our genetics play a role of course, but behavior is king and we can learn to impulse control our cravings. This is a very interesting topic for behavioral science lovers, and one of my own research areas too. Today we’ll start on this topic, and if you wish we can go more specifically into food and preference science for metabolism (Let me know in the comments). Overview of Chocolate Components
Before we delve into the specifics, let's first understand what exactly makes up chocolate. Chocolate is made from cocoa beans, which are roasted and ground to produce a thick paste called chocolate liquor. This paste contains two components: cocoa solids and cocoa butter. Cocoa solids give chocolate a rich flavor, while cocoa butter provides smoothness and creamy texture.
Additionally, chocolate is rich in several components, including flavonoids, theobromine, and caffeine, all of which contribute to its unique properties.
